Tout manger avec du pain
Presque tous les Russes ont du pain à la maison et ce phénomène a plusieurs causes. Premièrement, les Russes adorent les sandwichs. Ou, pour être plus précis, la version « russe », appelée « butterbrot » (de l’allemand « beurre » + « pain »). Habituellement, un butterbrot est juste une tranche de pain avec du beurre (facultatif) et quelque chose de facile à mettre dessus – une tranche de saucisson ou de fromage (ou du caviar rouge le soir du Nouvel An). Ce mets est toujours très rapide à réaliser. Deuxièmement, le pain a toujours été un accompagnement de base pour la plupart des aliments et plats, que ce soit le déjeuner ou le dîner, la soupe (bien sûr !) ou un plat principal. Les racines de cette habitude sont profondément ancrées dans l’histoire : de nombreuses régions soviétiques souffraient de la faim avant et pendant la Seconde Guerre mondiale. Ainsi, le pain, cet aliment traditionnel russe, est devenu une sorte de « superaliment » – un complément calorique à chaque plat, et parfois même la seule chose que les gens mangeaient pendant de longs mois.
Certaines babouchkas qui ont vécu la guerre mangeaient même de la pastèque avec du pain ! Les jeunes Russes modernes, au contraire, rejettent généralement le pain, car il favorise la prise de poids et les empêche de garder la ligne.

Pas de soupe – pas de vrai déjeuner!
Un déjeuner soviétique qui se respecte comprend généralement trois plats et un jus de fruits sucré (appelé kompot). Soit la formule salade + soupe + plat principal. C’est généralement ce qui est proposé au menu pour le déjeuner dans n’importe quel restaurant russe. La salade de légumes avec de l’huile de tournesol ou de la mayonnaise est bonne pour la digestion. La soupe regorge de graisses saines, tandis que le liquide chaud vous réchauffe. Et le plat principal fournit une bonne portion de glucides et de protéines (pâtes et poulet, purée de pommes de terre avec de la viande, riz avec du poisson, etc.). Enfin, une boisson sucrée à base de baies ou de fruits apporte les vitamines nécessaires. Ces repas à trois plats ont été créés par les autorités soviétiques pour les ouvriers des usines, car ils avaient besoin de suffisamment d’énergie pour mener à bien leur journée de travail. Entre-temps, ce schéma s’est avéré si populaire que les étudiants, les enfants des écoles maternelles et simplement les employés de bureau ont également commencé à manger ce type de repas.
Les Russes ont deux proverbes populaires : « Le pain est au-dessus de tout » et « La soupe est au-dessus de tout ». Ainsi, sans soupe riche et bien chaude, un déjeuner n’est pas considéré comme complet. Cela dit, les petits enfants ne mangent généralement de la soupe qu’au déjeuner. C’est un moyen facile de leur apporter des acides gras, des fibres végétales ainsi que des liquides, car ils ne boivent généralement pas beaucoup.
Il existe de nombreuses soupes que les Russes apprécient particulièrement : le bortsch à la betterave rouge, le chtchi au chou ou au chou aigre, la soupe aux pois, la soupe de poisson (également réalisée à base de poisson en conserve bon marché) et la soupe au poulet et aux nouilles (découvrez plus de soupes ici).

D’étranges «soupes» chaudes et froides
Pendant l’été, peu de gens aiment manger des soupes chaudes… Cependant, ils se sont habitués à prendre un plat liquide pour le déjeuner. C’est pourquoi les Russes ont créé une alternative froide : une soupe d’été appelée « okrochka ». Elle se compose d’œufs durs hachés, de légumes frais (concombres, beaucoup de fines herbes, radis) et de viande bouillie ou de saucisses. On verse ensuite sur ce mélange une boisson fermentée – du kvas ou du kéfir ! La plupart des étrangers ne supportent généralement pas ce plat étrange, au début… mais ensuite ils s’y habituent et en raffolent (même si certains y restent allergiques à jamais) ! 
Nos lecteurs étrangers sont souvent surpris en apprenant que les Russes mangent même de la soupe au petit-déjeuner (cela n’arrive pas souvent, et fait probablement référence au fait qu’on en consomme lors des lendemains de fête) ! Mais il existe un autre plat fou, semblable à une soupe, qui est souvent servi aux enfants au petit-déjeuner. Il s’agit de lait avec des nouilles (littéralement du lait chaud avec n’importe quelle sorte de pâtes) !

Ajouter du sucre à… n’importe quoi!
En plus d’ajouter du lait aux pâtes, ces dernières peuvent aussi être consommées avec… une pincée de sucre ! Cela semble fou, mais de nombreux enfants russes raffolent de ce plat tout simple. Si votre enfant mange mal, c’est un excellent moyen d’ajouter des calories à son repas. Et si en plus vous avez un petit budget, c’est à la fois un dîner et un dessert dans une seule assiette ! Le sucre peut également être ajouté au sarrasin, au millet ou à toute autre bouillie, y compris à l’avoine. Mais on en met aussi sur le pain, dans la soupe (pour la rendre moins aigre) ou sur à peu près n’importe quoi, y compris les omelettes, le fromage cottage (tvorog) et bien d’autres plats. Si vous manquez de produits frais, en particulier de fruits et de légumes pendant le long hiver, comme c’était souvent le cas des Soviétiques, c’est un moyen simple et bon marché de rehausser le goût n’importe quel plat.

Tout manger et ne pas gaspiller de nourriture!
De nos jours, de nombreux jeunes Russes souffrent de troubles de l’alimentation. Et si les psychologues conseillent aux gens d’arrêter de manger lorsqu’ils sont rassasiés, nombreux sont ceux qui ne peuvent rien laisser dans leur assiette, car c’est ce que leurs grands-parents et leurs parents leur ont appris ! Les gens qui ont entendu parler des famines survenues au début de l’ère soviétique, et pendant le siège de Leningrad, savent que la nourriture ne doit pas être gaspillée, car on ne sait jamais quand on pourra manger la prochaine fois. Les mamans réprimandaient souvent les enfants s’ils laissaient de la nourriture dans leur assiette, car ceci était considéré comme du gaspillage d’argent et comme un manque de respect envers le cuisinier (c’est-à-dire votre mère ou votre grand-mère), sans parler de l’affront pour les millions de personnes affamées dans le monde ! Logiquement, gaspiller du pain était et est toujours considéré comme un péché ! C’est pourquoi le pain rassis était même utilisé pour différents plats (notamment pour la panure des côtelettes) ou simplement frit pour obtenir des croûtons.

Salades bien grasses à la mayonnaise
Quel est le premier plat fou qui vous vient à l’esprit quand vous pensez à la cuisine russe ? Le « hareng sous manteau de fourrure » en fait probablement partie ! « Le plat que j’aime le moins est le селедка под шубой [seliodka pod chouboï, hareng sous manteau de fourrure] », nous a écrit un lecteur sur notre chaîne Telegram. Cette salade controversée, mais toujours très populaire, se compose de hareng huileux et salé recouvert d’une « fourrure » de betteraves bouillies, de pommes de terre et de carottes moulues et d’une bonne dose de mayonnaise.En fait, il existe une longue liste de salades auxquelles les ménagères soviétiques ajoutaient de la mayonnaise (et qu’elles préparent encore aujourd’hui). Et chaque « chef » du foyer avait sa propre spécialité culinaire, préparée en mélangeant des ingrédients souvent très étranges et surprenants ! Légumes, viande, riz, poisson, etc… il pouvait y avoir toutes sortes d’ingrédients dans un bol et grâce à la mayonnaise… et tout se mariait bien ensemble ! Enfin, à peu près !

Passer des heures à boire du thé avec des sucreries
« Les Russes mangent beaucoup de gâteaux et de tartes », écrit un autre lecteur. Et il a raison ! Les Russes sont obsédés par les tartes et autres pâtisseries, les biscuits, les chocolats et les bonbons. Si vous rendez visite à un Russe, prenez quelque chose « pour le thé » et vous serez accueilli à bras ouverts ! Boire du thé est une tradition nationale russe. Thé le matin (oui, pas de café), thé pour la pause, thé après le dîner ou même à la place du dîner… le thé, c’est bien plus qu’une boisson, et il est aussi synonyme de longues et émouvantes discussions de cuisine. La tradition des longues soirées où l’on boit le thé est ancienne. Elle est apparue à l’époque tsariste, lorsque les gens se réchauffaient à côté d’un « samovar » (une énorme théière en métal typiquement russe), en raison de sa grande quantité d’eau bouillante, tout en sirotant du thé et en faisant la causette.

Les Russes peuvent passer des heures à boire du thé avec des sucreries. Les pâtisseries et les gâteaux sont souvent préparés à la maison et constituent le point culminant de toute réunion sociale. Les Russes prennent leur temps pour savourer chaque tasse de thé, accompagnée de tartes aux pommes, de torts au miel, de pain d'épices et de bonbons parfumés.
